Basil Ricotta Whole Wheat Penne Frittata

Over the Memorial Day weekend I was inspired to try the Penne Frittata recommended by Joanna Goddard in her Sunday Suppers Post. I wasn't sure how it would turn out, especially since I altered the recipe a bit by using whole wheat pasta (my personal favorite).
Well, I was so pleased with the outcome (see my frittata here on the left) that I decided it was one of my new favorite dishes. Not to mention, it is super easy to make, which is something that everyone likes.

The recipe, which which is given on the Martha Stewart website is here

I would like to mention that I followed the directions to a "T" (with the exception of switching out the regular pasta for whole wheat) but my actual baking time, with my oven set to 400, was closer to 15 minutes.

In pictures, here is more of our frittata adventure. The girls helped me out a bit too which made it even more fantastic:

Have a great Memorial Day!

Life is good. Savor every bite.
