Watermelon Salad






Watermelon Salad with Lime Syrup Recipe




Ingredients:
1/2 cup of sugar
1/2 cup water
Fresh juice of 1 lime
Approx 1 lb piece of Watermelon
Fresh Mint leaves



In a small saucepan, mix the sugar and water and bring to a boil. Reduce heat and simmer for about 10 or 15 minutes until syrup thickens. While this boils, squeeze the juice from one lime. Chop about a tsp of fresh mint. Remove syrup from heat and pour in a small bowl. Add lime juice to syrup and stir. Place bowl with syrup in an ice bath to cool while you prepare your salad.

Cut up the Watermelon into chunks, removing the rind. Arrange on plates and drizzle with syrup. Garish with lime and mint.
