Whole Wheat Almond Butter Cookies

My oldest daughter has a peanut allergy, which is ironic because peanut butter has always been one of my favorite foods. Now when I have the hankering to make peanut butter cookies, I have to do so after the children's bedtime (aka midnight cookies for the parental unit).
Instead of sneaking around to bake something forbidden to one of my tots, I've learned to make an alternative. I've found that almond butter cookies are just as good, if not better than their peanut butter cousins.

I've found this particular recipe to be slightly less sweet than other nut-based cookies and I prefer that. If you're looking for a sweeter version, you may want to up the sugar amount. Otherwise, you'll love these and you can feel less guilty about serving them to the kids knowing they are made with whole wheat and the goodness of almond butter, which is loaded with monounsaturated fats.


  • 3/4 cup all purpose flour 
  • 1/2 cup whole wheat pastry flour, or regular whole wheat flour (I used reg whole wheat flour)
  • 3/4 teaspoon salt
  • 1 teaspoon baking soda
  • 1/4 cup unsalted butter, softened
  • 3/4 cup smooth, unsalted almond butter
  • 1/3 cup packed light brown sugar
  • 1/3 cup granulated sugar
  • 1/2 teaspoon vanilla extract
1 egg

Preheat oven to 350.
Mix the dry ingredients together and in a separate bowl, mix the wet ingredients. Combine the wet and dry ingredients and mix. Form into small balls (about 3/4 ") and lay out on greased cookie sheet. Press down with a fork. Bake in oven for 10-12 minutes and cool on rack.
