A Cobbled Party Paved with Good Heart

Blueberry Cobbler

February is all about hearts and love but we've been all about couches and potatoes around here lately.
Between the cold weather and the domino effect of coughs and colds, we've kind of been laying-low.
 The girls and I got our acts together the other day and decided it was high time to throw a little party just for ourselves.
We put on heart hats and baked a Blueberry Cobbler. We made Valentines for Dad (shhh! it's a surprise!) and put on anything red and pinkish we could find. 

I'm learning fun is something we often have to 
make happen. 
So make it we did. 

Want a great recipe for Blueberry Cobbler? 

Blueberry Mixture-
2/3 cup sugar
2 Tablespoons Cornstarch
3/4 cup Water
3 cups Blueberries (Fresh or Frozen)
1 teaspoon melted butter or margarine
1 teaspoon cinnamon (optional)
Cobbler Topping--
1 cup sifted all purpose flour (I used whole wheat)
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/3 cup Milk
3 tablespoons melted butter or margarine

In a saucepan, combine sugar and cornstarch, stir in water. Bring to a boil, stirring constantly with a whisk. Boil for 1 minute. If mixture becomes too thick add a bit more water. Remove from heat and add blueberries. Pour Blueberry mixture into a lightly buttered 1 1/2 quart baking dish or 9 inch pie plate. Sprinkle with cinnamon and drizzle with 1 teaspoon melted butter. 

Sift together the flour, baking powder and salt. Pour milk and 3 tablespoons melted butter into a measuring cup then add to flour mixture all at once. Stir until mixture is moistened. Form a ball. Drop spoonfuls of mixture onto the blueberries. 
Bake 425 for 25 or 30 minutes or until lightly browned.
