Chocolate-Banana Cookie Ice Cream Sandwiches

When I'm looking for goodie recipes for my family, I'm always in search of kid-friendly things to both make and eat. 
"Kid Friendly" basically means fun, 
but what fun is it for parents if there's zero nutritional value?
I normally find that when parents and children meet somewhere in the middle, everyone is happy.

Banana bread is always a hit with my family--it's just sweet enough for the children to think it's a dessert and just healthy enough for me to not mind serving it.
On Sunday we decided to make Banana Cookies  as an alternative to bread and we even had the idea to add a little cocoa and turn them into ice cream sandwiches!
They weren't the prettiest things in the world, but they were SUPER yummy.








Here's how we did it:

2 cups of flour
1/4 cup of cocoa powder
1 cup mashed bananas
1/2 cup butter or margarine (room temperature)
1 cup of sugar
1 egg
1 teaspoon baking soda
pinch salt 
1/2 teaspoon ground cinnamon
Optional: chocolate chips or nuts (crushed) such as almonds/pecans/walnuts

Preheat Oven 350. Cream butter and sugar, add egg and beat until mixture is fluffy.
In another bowl, mix mashed bananas, and baking soda and allow to sit for about 2 minutes.
Combine banana mixture with butter mixture. Sift together flour salt, cocoa and cinnamon and add to the banana butter mixture. If just making cookies, simply mix until combined. If making sandwiches, mix with an electric mixture on med setting until a creamy mouse-like mixture is formed.

Spray a cookie sheet with cooking spray and using a large spoon, drop (about 3 inches round) in dollops on the pan. Bake for 11-13 minutes.  The sandwich cookies when cooled should be spongy.

Next, take Two cookies and sandwich-in your favorite ice cream. We like Neapolitan!

Rebecca and Jenny, I promise they taste better than they look! The pictures all came out making the sandwich look kind of questionable--but they were really yummy!

Oh--and we added a little bit of almonds to our "cookie" mix, which tasted pretty good--but if I could do it over I would leave them out.

Oh, wow! These look great. And it's not near as dangerous to eat 3 of these in one sitting as it is to eat 3 of the store-bought ones like I usually do.

I have no self control when it comes to icecream, sandwiches, or icecream sandwiches. ;-)
