Chicken Asparagus Orecchiette with Almond Pesto

I love pasta because it is romantic, very forgiving for beginner home cooks, normally inexpensive and always super delicious. Pasta recipes have been handed down from one generation to the next in my family and now I'm branching out and creating my own recipes. It's fun to experiment in the kitchen to find what works for my family and what dishes they love. 
 Orecchiette pasta with Pesto sauce is something I love making and it works well for a weekend meal or even a special date nightThis is a very easy pasta dish to prepare and can be easily made in about 1/2 an hour. It stores well and works well for leftover meals. A vegetarian version can obviously made by removing the chicken from the recipe. I often like to make it this way and I have even added feta at the end for another twist. 

Chicken and Asparagus Orecchiette with Almond Pesto

Pesto Sauce:
2 cups fresh basil leaves
1/2 cup parmesan cheese
1/2 cup of olive oil
2 Tablespoons Almond butter
3 garlic cloves
salt and pepper to taste

Blend ingredients until a a sauce is formed. Add a little more olive oil if too thick. Set aside. 
* I like to roast my garlic before adding it but either way is fine.

The Chicken:
Grilled chicken works best for this dish but otherwise, you can bake your chicken in the oven topped with some pesto sauce. Bake 400 for 20-25 minutes or until juices run clear. Cool for 10 minutes then slice. 

The Asparagus:
Grilled asparagus is best as well but otherwise, roast them in the oven at 500 degrees for 3-5 minutes. Chop into 3 inch pieces. 

The Pasta:
Boil one package of Orecchiette pasta until al dente. 

Drain pasta leaving a very small amount of the pasta water in the pot, add pesto sauce and toss. Add chicken and asparagus and toss. 

Serve and enjoy!

The test of this recipe is very good and unique from the other pasta dishes. It is very healthy dish and best to prepare in breakfast. I like to prepare it every holiday.
